One of our most popular classes! Everything you have ever wanted to know about that favorite Italian cheese from making mozzarella cheese right in your own home to using it in a variety of recipes. You even get a piece of curd to take home to practice. This class will focus on the technique of making and using mozzarella cheese.

An Evening of Americana

Here is a new twist on classic family favorites. You’ve probably cooked roasted potatoes but the new twist here is panko crumbs. The original creamy pearl onions will be replaced with lovely spring green scallions, the crab cakes are made with potato chips, and garden salad will be replaced with spinach and strawberries.

Back in January 2004, Glamour published a recipe for "Engagement Chicken," so called because soon after staffers whipped it up, their boyfriends popped the question. I’ve been making apple pies forever, but the one you learn how to make tonight will be the most delectable home spun dessert. You’ll be a hero, a culinary genius, the perfect mother or father. This hands-on class will teach you how to make 2 different flaky piecrusts, one with a pastry blender and the other in a food processor. The apple pie filling is cooked first and makes the most amazing difference in the finished pie. Best of all, you take home your own pie to pop in the oven. After class, we’ll taste the sample pies with Cheddar Cheese and/or Ice Cream, and Coffee or Tea.

Techniques taught by authentic Japanese Sushi Chef Mamie Nishide. She was born and raised in Japan and came to the US to study business. After graduation from business school and a career on Wall Street, Mamie abandoned corporate life for her culinary passion. Finishing a Culinary Arts degree from the Institute of Culinary Education she continued her training at the test kitchen for Country Living Magazine in New York and Le Bernardin, as well as top restaurants in Manhattan.

Quiche Cooking Class - Suffolk and Nassau County

A Quiche Workshop

Quiche continues to be a perennial favorite for everyone.  In this exciting class, you will learn to make a buttery crust, and a puffed golden custard, along with several luscious fillings.  After this class, you’ll know why quiche is still one of the most requested recipes at home and in restaurants.  It is also a great make ahead of time dish.

We will prepare a Quiche Lorraine, a dish that originated in Northern France, A Spinach Mushroom Quiche, and a Roasted Vegetable Quiche. 

The salad will compliment the quiche using a delicate Bibb lettuce and Mixed Baby Greens. 

A second salad of spinach with fruit, nuts, pickled onions and a cooked dressing will also be prepared.

For dessert an Oreo Cookie Brownie.  Yes, that’s correct, I actually think we can perfect the Oreo cookie.
