Chilly Penguin Cheese Ball

Serves 15 - 20.

Ingredients

• 16 oz. cream cheese, softened.

• 4 oz. blue cheese.

• 2 tsp. chopped shallots.

• ¼ tsp. coarse salt.

• Dash hot sauce, such as Frank’s Red Hot.

• ½ c. poppy seeds, for coating.

• 2 dark raisins.

• 1 almond.

• 1 carrot.

• 1 red bell pepper (optional), and 1 scallion, for decorating.

• Crackers, for serving.
   

1. Using a stand mixer or a bowl and spatula, mix cream cheese, blue cheese, shallots, salt, and hot sauce.
    

2. Form the mixture into a ball and cover with plastic wrap; refrigerate at least 2 hours or overnight.
    

3. Before serving, remove a 2-inch piece of the cheese mixture, roll into a ball, and set aside; this will be the penguin's head.
    

4. Reform the remaining mixture into an egg shape.
    

5. Cut out a triangle roughly the length of your cheese ball from a sheet of wax paper. Press the paper into the cheese ball, with the widest part of the paper on the widest part of the ball.
    

6. Roll the ball in the poppy seeds. Set ball on plate. Slowly remove the wax paper. Ball should be covered in poppy seeds, save for the penguin's breast.
    

7. Set head atop body. Add raisins for eyes and almonds for beak. Slice off two equal-size carrot rounds and place on either side of the head as earmuffs. Connect earmuffs with the green part of the scallion.
    

8. Using a vegetable peeler, peel one long strip off the remaining carrot; wind this around the penguin's neck as a scarf. Slice remaining carrot into toes; arrange at the bottom of the body to make feet or use two red bell pepper slices for skis.
